  • 4 cups chicken broth Use low-sodium broth for less salt.
  • 1 cup gluten-free all-purpose flour Look for certified gluten-free brands.
  • 2 tsp baking powder For fluffiness in the dumplings.
  • 1/2 tsp salt
  • 1/4 cup butter, melted Substitute with dairy-free alternative if needed.
  • 3/4 cup milk (or dairy-free alternative) Use almond milk or oat milk for dairy-free.
  • 1 cup chopped vegetables (carrots, celery, onions) Feel free to add other veggies.
  • 1 tsp garlic powder
  • 1 tsp thyme Fresh thyme works well.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, cook the chicken in the chicken broth over medium heat until cooked through, about 15-20 minutes. Remove the chicken, shred it, and set aside.
  2. In the same broth, add the chopped vegetables and cook until tender, about 5-7 minutes.
  3. Meanwhile, in a mixing bowl, combine the gluten-free flour, baking powder, and salt. Stir in melted butter and milk until a dough forms.
Cooking
  1. Drop spoonfuls of the dough into the pot with the broth and vegetables.
  2. Cover and simmer for about 10-15 minutes until the dumplings are cooked through.
  3. Add the shredded chicken back into the pot, season with garlic powder, thyme, salt, and pepper.
  4. Serve hot and enjoy your gluten-free comfort food!

Notes

To ensure tender dumplings, avoid overmixing the dough; just combine the ingredients until no dry flour remains. For a thicker broth, let it simmer uncovered for a few minutes after adding the dumplings. Consider adding a bay leaf or a dash of lemon juice for extra flavor.
