Ingredients
  

For the Potatoes
  • 1 pound baby potatoes Choose uniform size for even cooking.
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced Adjust according to taste.
  • Salt to taste salt
  • Pepper to taste pepper
For the Garlic Sauce
  • 1/2 cup sour cream Can substitute with Greek yogurt.
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
For Garnish
  • Fresh parsley for garnish fresh parsley, chopped Adds color and freshness.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the baby potatoes, then cut them in half.
  3. In a large mixing bowl, combine olive oil, minced garlic, salt, and pepper.
  4. Add the halved baby potatoes to the bowl and toss until well coated.
Roasting
  1. Spread the potatoes in a single layer on a baking sheet.
  2. Roast in the preheated oven for 25-30 minutes, or until golden and tender.
Making the Garlic Sauce
  1. While the potatoes are roasting, mix together sour cream, lemon juice, oregano, salt, and pepper in a separate bowl.
Serving
  1. Once the potatoes are done, remove them from the oven and drizzle the garlic sauce over them.
  2. Garnish with fresh parsley and serve warm.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven or microwave, being mindful to avoid mushiness.
