Preparation
- Preheat the oven to 400°F (200°C).
- Wash and scrub the baby potatoes, then cut them in half.
- In a large mixing bowl, combine olive oil, minced garlic, salt, and pepper.
- Add the halved baby potatoes to the bowl and toss until well coated.
Roasting
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden and tender.
Making the Garlic Sauce
- While the potatoes are roasting, mix together sour cream, lemon juice, oregano, salt, and pepper in a separate bowl.
Serving
- Once the potatoes are done, remove them from the oven and drizzle the garlic sauce over them.
- Garnish with fresh parsley and serve warm.
