  • 4 cups baby potatoes, halved

  • 4 cloves garlic, minced Fresh garlic is recommended.
  • 1 cup chicken broth Can substitute with vegetable broth.
  • 1 teaspoon dried Italian herbs e.g., thyme, oregano, basil.
  • Salt and pepper to taste Always taste and adjust.
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Method
 

Preparation
  1. In a bowl, combine the Parmesan cheese, minced garlic, chicken broth, Italian herbs, salt, and pepper.
  2. Place the chicken breasts at the bottom of the crockpot and drizzle with olive oil.
  3. Arrange the halved potatoes around the chicken.
  4. Pour the Parmesan and garlic mixture over the chicken and potatoes.
Cooking
  1. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
  2. Garnish with fresh parsley before serving.

Notes

You can serve this dish with a fresh salad, steamed vegetables, or garlic bread. For storing, let the dish cool and transfer to an airtight container. It keeps well in the fridge for 3-4 days or can be frozen for up to three months.
