  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley (for garnish)

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, minced garlic, salt, black pepper, and Italian seasoning.
  3. Add the chicken breasts to the bowl and coat them evenly with the mixture.
  4. In a separate bowl, toss the halved baby potatoes with any remaining oil and seasonings.
  5. Spread the chicken and potatoes in a single layer on a baking sheet.
  6. Sprinkle the grated Parmesan cheese over the chicken and potatoes.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the potatoes are golden and crispy.
  2. Garnish with chopped parsley before serving.

Notes

To store leftovers, let the dish cool completely, then place it in an airtight container in the refrigerator. It will keep well for 3-4 days. You can freeze the cooked chicken and potatoes for up to 2 months.
