Preparation
- Choose a steak with good marbling for the best flavor and tenderness. Aim for about 1-inch thick cuts.
- Pat your steak dry with paper towels and generously season both sides with salt and pepper.
Cooking
- Heat a cast-iron skillet or heavy-duty pan over high heat until scorching.
- Add the seasoned steak to the hot skillet and let it sear without moving it for about 3-4 minutes.
- Flip the steak and cook for an additional 3-4 minutes.
- Reduce heat to medium, add butter and smashed garlic cloves to the pan, and spoon the melted butter over the steak.
- Check for desired doneness using a meat thermometer (about 130°F or 54°C for medium-rare). Remove from the pan and let rest for a few minutes before slicing.
Serving
- Slice the steak against the grain, drizzle with reserved garlic butter, and garnish with fresh herbs. Serve with sides like roasted vegetables or salad.
Notes
Bring steak to room temperature before cooking and do not overcrowd the pan if cooking multiple steaks. Always use a meat thermometer for best results.
