  • 1 pound ground beef or turkey Choose lean meat for a healthier option.
  • 1 small head cabbage, chopped Green cabbage is recommended, but alternatives like napa cabbage can be used.
  • 1 can diced tomatoes, undrained (15 ounces) Use fire-roasted tomatoes for extra flavor.
  • 1 packet taco seasoning (1 ounce) Adjust spice level to taste.
  • 2 cups Fritos corn chips Add just before serving for maximum crunch.
  • 1 cup shredded cheese (cheddar or Mexican blend) Can substitute with pepper jack for a kick.
  • Salt and pepper to taste Season according to preference.
Optional Toppings
  • diced onions For added crunch and flavor.
  • jalapeños For a spicy kick.
  • chopped cilantro Adds freshness.

Method
 

Preparation
  1. In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat.
  2. Add the chopped cabbage to the skillet and stir to combine. Cook for about 5 minutes until the cabbage starts to soften.
  3. Stir in the diced tomatoes (with juices) and taco seasoning. Mix well and reduce the heat to low. Simmer for another 10 minutes to let the flavors meld.
  4. Taste and season with salt and pepper as needed.
  5. Remove from heat and sprinkle the Fritos and cheese on top. Cover the skillet to let the cheese melt for a few minutes.
  6. Serve while hot, and enjoy the delightful crunch of Fritos with the savory mix!

Notes

Storage: Keep leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat gently before serving. Can freeze for up to 3 months without Fritos.
