- In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat.
- Add the chopped cabbage to the skillet and stir to combine. Cook for about 5 minutes until the cabbage starts to soften.
- Stir in the diced tomatoes (with juices) and taco seasoning. Mix well and reduce the heat to low. Simmer for another 10 minutes to let the flavors meld.
- Taste and season with salt and pepper as needed.
- Remove from heat and sprinkle the Fritos and cheese on top. Cover the skillet to let the cheese melt for a few minutes.

Notes
Storage: Keep leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat gently before serving. Can freeze for up to 3 months without Fritos.
