Ingredients
  

Main Ingredients
  • 1 pound ground beef Lean ground beef is recommended.
  • 1 packet taco seasoning Adjust the amount to taste.
  • 4 cups chopped green cabbage Use fresh cabbage for best flavor.
  • 1 cup diced tomatoes Ripe tomatoes recommended.
  • 1 cup canned black beans Drained and rinsed.
  • 1 cup canned sweet corn Drained.
  • 2 cups Fritos corn chips Add just before serving to keep crunchy.
  • 1.5 cups shredded cheddar cheese For extra cheesy goodness.
  • 0.5 cup ranch dressing Or Southwest-style dressing.

Cooking
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning and a splash of water. Stir and simmer for 2–3 minutes.
Preparation
  1. While the beef is cooking, chop the cabbage and dice the tomatoes. Drain the corn and black beans.
Assembly
  1. In a large serving bowl or casserole dish, layer cabbage, beef, beans, corn, and tomatoes. Toss gently.
  2. Top the mixture with Fritos and sprinkle with shredded cheddar cheese.
  3. Drizzle with dressing just before serving and toss lightly if desired.

Notes

Store Frito Cowboy Cabbage in an airtight container in the refrigerator for up to 3 days. Avoid freezing due to the high moisture content of the cabbage.
