Fried Strawberry Cheesecake Sandwiches

Ingredients
  

For the Filling
  • 1 cup cream cheese, softened Make sure it's fully softened for a smooth filling.
  • 1/4 cup powdered sugar Adjust sweetness to taste.
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, sliced Can use frozen if thawed and drained.
  • 1/2 cup strawberry jam or preserves
For the Sandwiches
  • 8 slices brioche or thick white bread
For the Batter
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 large egg
  • 1 tbsp granulated sugar
  • Pinch salt
For Frying
  • Vegetable oil for frying Can also use canola or sunflower oil.
  • 1/2 cup sweetened condensed milk Optional for drizzling.

Method
 

Preparation
  1. In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread the cream cheese mixture on one side of four slices of bread, top with strawberries and strawberry jam, and then form sandwiches by placing the other slice of bread on top.
Batter and Frying
  1. In another bowl, whisk together flour, milk, egg, vanilla extract, granulated sugar, and salt until smooth.
  2. Heat vegetable oil in a deep skillet to 350°F (175°C).
  3. Dip each sandwich into the batter and fry for 2-3 minutes per side until golden brown.
  4. Drain excess oil on paper towels, drizzle with sweetened condensed milk if desired, and serve warm with fresh strawberries.

Notes

Best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet or microwave but note that they won't be as crispy.
