Ingredients
  

Pasta and Salmon
  • 8 oz fettuccine or penne Use your favorite pasta
  • 1 lb salmon fillet Fresh or thawed if frozen
  • 2 tablespoons olive oil For cooking the salmon
  • Salt Salt and pepper to taste
Sauce and Vegetables
  • 1/2 cup pesto Store-bought or homemade
  • 1 cup heavy cream For the creamy sauce
  • 2 cups fresh spinach Can substitute with other greens
  • Parmesan cheese for garnish Optional, for serving

Method
 

Cooking the Pasta
  1. Cook the pasta according to package instructions. Drain and set aside.
Preparing the Salmon
  1. In a large skillet, heat olive oil over medium heat. Season the salmon with salt and pepper, and cook for about 4-5 minutes on each side until cooked through.
  2. Remove salmon and flake it into bite-sized pieces.
Making the Sauce
  1. In the same skillet, add fresh spinach and cook until wilted.
  2. Stir in pesto and heavy cream, mixing until well combined and heated through.
Combining Ingredients
  1. Add the cooked pasta and flaked salmon to the skillet, tossing gently to coat everything in the sauce.
  2. Serve warm, garnished with Parmesan cheese.

Notes

For an elevated experience, serve in shallow bowls, and pair with a light salad and white wine.
