- In a bowl, whisk together egg whites, milk, flour, sugar, and vanilla extract until smooth.
- Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or butter.
- Pour a small amount of batter into the skillet, tilting to coat the bottom evenly.
- Cook for about 1-2 minutes until the edges start to lift, then flip and cook for another minute.
- Remove the crepe from the skillet and repeat with the remaining batter.
- Fill each crepe with your favorite fruits or yogurt, roll or fold, and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. Layer parchment paper between crepes to prevent sticking. Reheat on a skillet or microwave.
