Ingredients
  

For the Fish Bites
  • 1 pound fish fillets (such as cod or tilapia)
  • 1 cup breadcrumbs Panko breadcrumbs can be used for extra crunch.
  • 1/2 cup grated parmesan cheese Can substitute with pecorino or a vegan cheese.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika Add cayenne pepper for a spicy kick, if desired.
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • Olive oil spray For coating the fish bites before baking.
For the Creamy Garlic Aioli
  • 1/2 cup mayonnaise Greek yogurt or sour cream can be used as alternatives.
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine breadcrumbs, parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. Cut the fish fillets into bite-sized pieces.
Coating and Baking
  1. Dip each piece of fish into the beaten eggs, then coat with the breadcrumb mixture.
  2. Place the coated fish bites on a baking sheet lined with parchment paper and spray lightly with olive oil.
  3. Bake for 12-15 minutes or until golden and cooked through.
Making the Aioli
  1. In a small bowl, mix mayonnaise, minced garlic, lemon juice, salt, and pepper.
Serving
  1. Serve fish bites hot with the aioli on the side.

Notes

Store leftover fish bites in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
