Ingredients
  

For the Fish Bites
  • 1 pound fish fillets (such as cod or tilapia) Ensure freshness for best flavor.
  • 1 cup breadcrumbs Panko breadcrumbs can be used for extra crunch.
  • 1/2 cup grated parmesan cheese Can substitute with other hard cheese.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste Adjust to preference.
  • 2 large eggs, beaten
  • Olive oil spray For coating.
For Creamy Garlic Aioli
  • 1/2 cup mayonnaise Can substitute with Greek yogurt or sour cream.
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste Adjust to preference.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine breadcrumbs, parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. Cut the fish fillets into bite-sized pieces.
  4. Dip each piece of fish into the beaten eggs, then coat with the breadcrumb mixture.
  5. Place the coated fish bites on a baking sheet lined with parchment paper and spray lightly with olive oil.
Cooking
  1. Bake for 12-15 minutes or until golden and cooked through.
  2. For the garlic aioli, mix mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl.
  3. Serve fish bites with the aioli on the side.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze individually for up to 2 months. Reheat in the oven at 375°F (190°C) until heated through.
