  • 1 cup lentils (green or brown) Use any variety of lentils.
  • 1 onion, chopped Yellow or white onion can be used.
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 bell pepper, diced Any color bell pepper works.
  • 2 cloves garlic, minced
  • 1 can crushed tomatoes (14 oz) Canned or fresh tomatoes can be used.
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil Fresh basil can be used, if available.
  • 1 teaspoon oregano Fresh oregano can be substituted.
  • Salt and pepper to taste
  • Pasta of your choice (for serving) Whole grain or gluten-free options can be used.
  • Grated Parmesan cheese (optional, for serving)

Method
 

Preparation
  1. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and bell pepper. Sauté for about 5-7 minutes, until the vegetables are tender.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the lentils, crushed tomatoes, dried basil, oregano, salt, and pepper.
  4. Pour in 2 cups of water, bring to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the lentils are tender.
  5. Meanwhile, cook the pasta according to package instructions.
  6. Serve the lentil bolognese sauce over the pasta and top with grated Parmesan cheese, if desired.

Notes

For a spicier kick, add red pepper flakes while sautéing the vegetables. You can swap out lentils for canned beans or chickpeas for a different texture, or toss in any leftover vegetables for variety.
