- Heat vegetable oil in a large skillet over medium heat.
- Add the diced onion and garlic, and sauté until fragrant.
- Add the ground chicken, breaking it apart as it cooks.
- Stir in sriracha, soy sauce, salt, and pepper, and cook until chicken is browned and cooked through.
- Add the diced bell pepper and cook for another 2-3 minutes until tender.
- Serve over cooked rice.
Notes
Garnish with chopped green onions or sesame seeds for extra flavor. Pairs well with steamed vegetables or light salad.
