Ingredients
  

For the hot dogs
  • 8 pieces high-quality beef hot dogs
  • 8 pieces hot dog buns (brioche or classic)
  • 1/4 cup hot sauce (such as Sriracha or a spicy buffalo sauce)
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon vegetable oil (for the grill or pan)
  • 2 pieces fresh jalapeƱos, thinly sliced
  • 3 pieces green onions, chopped
  • 1/4 cup spicy mayonnaise (mayo mixed with a little hot sauce)
  • to taste red pepper flakes (optional for extra garnish)

Method
 

Preparation
  1. In a small bowl, whisk together the hot sauce, honey, soy sauce, garlic powder, and smoked paprika until the mixture is smooth. Set this firecracker sauce aside.
  2. Use a small knife to make shallow, diagonal cuts along the length of each beef hot dog. Space the cuts about half an inch apart.
  3. Preheat your grill or a large skillet over medium-high heat. Lightly coat the surface with vegetable oil to prevent sticking.
Cooking
  1. Place the beef hot dogs on the grill or in the pan. Cook for about 5 to 7 minutes, turning them occasionally, until browned and heated through.
  2. During the last 2 minutes of cooking, use a brush to coat each hot dog with the firecracker sauce, allowing it to bubble and caramelize.
Serving
  1. While the hot dogs finish cooking, lightly toast the buns on the grill or in a toaster until golden brown.
  2. Place each glazed beef hot dog into a toasted bun.
  3. Drizzle a little more firecracker sauce over the top if desired.
  4. Top each hot dog with sliced jalapeƱos, chopped green onions, and a drizzle of spicy mayonnaise.
  5. Serve immediately while hot and juicy.
