  • 1 cup cooked rice Any cooked rice, can use white, brown, or cauliflower rice.
  • 1 cup corn
  • 1 cup black beans, drained and rinsed Can substitute with pinto or kidney beans.
  • 1 medium bell pepper, diced
  • 1 tbsp olive oil For cooking shrimp.
  • 1 tsp cumin
  • 1 tsp chili powder Adjust based on spice preference.
  • to taste none Salt
  • to garnish none Fresh cilantro

Method
 

Cooking
  1. In a skillet, heat olive oil over medium heat.
  2. Add the shrimp and cook until they turn pink.
  3. Stir in the bell pepper, corn, black beans, cumin, chili powder, and salt. Cook until heated through.
  4. Serve the shrimp mixture over cooked rice.
