Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, place the sliced fennel and black olives.
  3. Drizzle with olive oil and lemon juice, and mix to combine.
  4. Season the fish fillets with salt and pepper, then place them on top of the fennel and olive mixture.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  2. Garnish with fresh herbs before serving.
