Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, place the sliced fennel and minced garlic at the bottom.
  3. Lay the fish fillets on top of the fennel.
  4. Drizzle with olive oil and lemon juice.
  5. Scatter the black olives over the fish, and season with salt and pepper.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.
  2. Garnish with fresh parsley before serving.

Notes

Serve with roasted vegetables or a light quinoa salad. A crisp white wine such as Sauvignon Blanc complements the dish well.
