Preparation
- Place the chicken in the bottom of your slow cooker.
- Add the sliced onion, minced garlic, and ginger on top.
- Pour in the soy sauce, sake (if using), mirin (if using), sugar, rice vinegar (if using), and water or chicken broth.
Cooking
- Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
- Once the chicken is cooked and tender, remove it from the slow cooker and shred it with two forks.
- In a small bowl, mix the cornstarch with a little water to create a slurry and stir it into the cooking liquid in the slow cooker.
- Turn the slow cooker to high and let it cook for an additional 10-15 minutes until the sauce thickens.
- Return the shredded chicken to the sauce, mix well, and serve hot, garnished with toasted sesame oil, sesame seeds, and green onions if desired.
Notes
For a deeper flavor, consider marinating the chicken in the soy sauce and ginger mixture for a few hours before cooking. If you prefer a thicker sauce, increase the cornstarch slightly or let it reduce longer in the slow cooker. Don't shy away from adding your favorite vegetables for added nutrition and flavor.
