  • 1 lb lean ground turkey
  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken or vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
Spices
  • 2 tsp chili powder
  • 1 tsp cumin
  • to taste Salt and pepper

  • 2 tbsp olive oil for cooking

  1. In a large pot, heat olive oil over medium heat. Add diced onions and cook until softened.
  2. Add minced garlic and ground turkey, breaking it apart with a spoon. Cook until the turkey is browned.
  3. Stir in the sweet potatoes, black beans, corn, diced tomatoes, and broth. Add chili powder, cumin, salt, and pepper.
  4. Bring to a simmer and cover. Cook for about 20-25 minutes, or until sweet potatoes are tender.
  5. Taste and adjust seasoning if necessary. Serve warm, and enjoy!

Notes

This chili is versatile and can be served with toppings like chopped cilantro, sour cream, or cheese. Cornbread or rice is great as a side. Leftovers can be stored for up to 4-5 days in the refrigerator, or can be frozen for up to 3 months.
