  • 1 pound lean ground turkey
  • 2 medium sweet potatoes, diced
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can corn (15 ounces), drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
Spices and seasoning
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
Toppings
  • Avocado, shredded cheese, or fresh cilantro for topping

Method
 

Cooking
  1. In a large pot, brown the ground turkey over medium heat. Drain any excess fat.
  2. Add the chopped onion and minced garlic; sauté until softened.
  3. Stir in the diced sweet potatoes, diced tomatoes, corn, chili powder, cumin, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer for about 20-25 minutes, until the sweet potatoes are tender.
  5. Serve hot, topped with avocado, shredded cheese, or fresh cilantro as desired.

Notes

Leftovers can be stored in the refrigerator for up to 4 days, and can also be frozen for up to 3 months. Adjust spices and experiment with additional vegetables for customization.
