Preparation
- Place the salmon fillets on a large plate. Drizzle them with oil and evenly coat with black pepper, soy sauce, and onion powder. Use your hands or a brush to gently rub the seasonings into the fish, ensuring even coverage.
Cooking
- Heat a non-stick pan over medium heat. Once hot, add the seasoned salmon fillets skin-side down (if applicable) and sear for about 4-5 minutes on each side until each fillet is rich and golden brown.
- In the same pan, lower the heat and add the sweet chilli sauce, diced garlic, ginger, and lime juice. Stir gently to combine, allowing the flavors to meld beautifully.
- Let the sauce simmer for 3-4 minutes until it thickens slightly. Return the seared salmon to the pan, ensuring it’s thoroughly coated in the sweet chili glaze. Cook for another minute, letting the sauce cling to the fish.
Notes
This dish pairs wonderfully with fluffy jasmine rice or quinoa. Add a side of steamed vegetables tossed in a bit of sesame oil for color and nutrition. Garnish with fresh coriander for a vibrant finish.
