  • 2 cups peaches, sliced Use ripe, in-season peaches.
  • 1/4 cup red onion, thinly sliced Soak in cold water for 10 minutes to lessen sharpness if desired.
  • 1/4 cup fresh mint leaves, chopped
Dressings and Seasoning
  • to taste olive oil Drizzle to enhance flavor.
  • to taste balsamic vinegar Can substitute with apple cider vinegar or a light citrus vinaigrette.
  • to taste salt and pepper
Optional Toppings
  • Feta cheese Optional; sprinkle on top before serving.

Preparation
  1. In a large bowl, combine the cubed watermelon, sliced peaches, and red onion.
  2. Add the chopped mint leaves.
  3. Drizzle with olive oil and balsamic vinegar to taste.

  5. Season with salt and pepper.
