- In a large pot, heat sesame oil over medium heat. Add chopped onion, garlic, and ginger, and sauté until fragrant.
- Add the chicken pieces and cook until they are browned.
- Stir in gochugaru, soy sauce, and water.
- Add potatoes and carrots to the pot.
- Cover and let it simmer on low heat for about 30-40 minutes, or until the chicken is tender and the sauce is rich.
- Serve hot with rice or noodles.
Notes
Leftover stew can be stored in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze it for up to 3 months. Ensure chicken is cooked through by checking it reaches an internal temperature of 165°F (75°C).
