  • 3 cups Potatoes, diced Russet or Yukon Gold are best
  • 1 lb Smoky sausage, sliced You can use pre-cooked sausage to save time
  • 2 cups Bell peppers, diced Feel free to use various colors for a vibrant appearance
  • 1 tbsp Cajun seasoning Adjust according to taste for spiciness
  • 4 cups Vegetable broth Use low-sodium if preferred
  • 1 cup Heavy cream Can substitute with coconut milk for a lighter version
  • 1 medium Onion, diced Adds flavor depth
  • 2 cloves Garlic, minced Provides fragrance
  • to taste Salt Adjust to personal preference
  • to taste Black pepper Adjust to personal preference
  • as needed Warm bread For serving (highly recommended!)

Method
 

Preparation
  1. In a large pot, sauté diced onion and garlic until fragrant.
  2. Add diced potatoes, sliced sausage, and bell peppers; cook for a few minutes.
  3. Stir in Cajun seasoning and broth, then bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream and season with salt and black pepper.
  6. Serve hot with warm bread.

Notes

For a thicker soup, mash some of the potatoes after cooking. This soup freezes well for up to 3 months.
