Ingredients
  

For the Rice and Shrimp
  • 1 cup Rice Use jasmine or basmati rice for best results.
  • 1 lb Shrimp Fresh shrimp preferred; if using frozen, thaw completely before cooking.
  • 2 tablespoons Olive oil For cooking shrimp.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
For the Pineapple Salsa
  • 1 cup Pineapple Diced.
  • 1/2 cup Red onion Chopped.
  • 1/4 cup Cilantro Chopped.
  • 2 tablespoons Lime juice Freshly squeezed.

Method
 

Preparation
  1. Cook the rice according to package instructions.
  2. In a bowl, combine diced pineapple, chopped red onion, cilantro, lime juice, salt, and pepper to make the salsa.
Cooking the Shrimp
  1. In a skillet, heat olive oil over medium heat.
  2. Season shrimp with salt and pepper, then add to the skillet.
  3. Cook until shrimp are pink and cooked through, about 5-7 minutes.
Serving
  1. Serve the cooked shrimp over the rice and top with pineapple salsa.

Notes

For leftovers, store in an airtight container in the refrigerator and consume within 2 days. Reheat in microwave or low-heat skillet. Keep salsa separate until ready to serve.
