Ingredients
  

Noodles and Vegetables
  • 200 grams Jelly noodles (or mung bean noodles)
  • 1 medium Cucumber (sliced)
  • 1 medium Carrot (julienned)
  • 3 stalks Green onions (chopped)
Dressing
  • 3 tablespoons Soy sauce
  • 2 tablespoons Sesame oil
  • 1 tablespoon Chili oil
  • 2 cloves Garlic (minced)
  • 1 tablespoon Vinegar Rice vinegar recommended
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Method
 

Preparation
  1. Cook the jelly noodles according to package instructions, then rinse under cold water until chilled.
  2. In a mixing bowl, combine soy sauce, sesame oil, chili oil, minced garlic, vinegar, salt, and pepper to create the dressing.
Assembly
  1. Toss the chilled noodles with the cucumber, carrot, and green onions.
  2. Pour the dressing over the noodle mixture and toss well to combine.
  3. Serve immediately or chill in the refrigerator for a refreshing meal.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Add a splash of soy sauce or sesame oil if the noodles become dry. Rinse noodles thoroughly after cooking to keep them from becoming sticky.
