Ingredients
  

Pasta and Vegetables
  • 8 ounces pasta (e.g., rotini, penne) Cook pasta al dente
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons vinegar (e.g., red wine or balsamic)
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

Method
 

Preparation
  1. Cook the pasta according to package instructions; drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, vinegar, Italian seasoning, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Consider keeping the dressing separate and adding it just before serving to maintain the salad's crispness.
