Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, garlic, Italian seasoning, salt, and pepper.
  3. Add the chicken breasts and baby potatoes to the bowl, tossing to coat them in the mixture.
  4. Arrange the chicken and potatoes in a single layer on a baking sheet.
  5. Sprinkle the Parmesan cheese evenly over the chicken and potatoes.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
  2. Garnish with chopped parsley before serving.

Notes

Cut the potatoes into similar sizes for even cooking. Flatten chicken breasts for quicker cooking. Try different cheeses for unique flavors. Adjust Italian seasoning to taste or add red pepper flakes for heat.
