Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cup unsalted butter, melted
For the filling
  • 2 cups cream cheese, softened Ensure it's at room temperature for easy blending.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream Whipped to stiff peaks.

Method
 

Preparation of the crust
  1. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  2. Chill in the refrigerator while preparing the filling.
Preparation of the filling
  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Gradually add powdered sugar and vanilla extract, blending until well combined.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until smooth and well combined.
Assembly
  1. Pour the filling into the chilled crust, smoothing the top with a spatula.
  2. Refrigerate for at least 4 hours or until set.
