  • 1 cup corn (fresh or canned) You can use frozen corn as a substitute.
  • 1 whole avocado, diced Add just before serving to prevent browning.
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cup cilantro, chopped Parsley can be used as a substitute.
  • 1 whole lime, juiced For best flavor, use fresh lime.
  • 1 tsp chili powder Adjust according to taste.
  • to taste Salt and pepper
  • optional Tortilla strips for topping

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, corn, avocado, cherry tomatoes, red onion, and cilantro.
  2. Drizzle with lime juice and sprinkle with chili powder, salt, and pepper.
  3. Toss everything together until well mixed.
Serving
  1. Serve in bowls, topped with tortilla strips if desired.

Notes

For added flavor, marinate the chicken in lime juice and garlic a few hours before cooking. To make the dish spicier, include diced jalapeƱos.
