  • 2 pieces chicken breasts Boneless and skinless preferred
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt Adjust to taste
  • 1/4 teaspoon pepper Adjust to taste
For the Bowl
  • 2 cups brown rice or quinoa Cooked according to package instructions
  • 1 cup cucumbers Chopped
  • 1 cup tomatoes Chopped
  • 1/2 cup red onion Sliced
  • 1 cup tzatziki sauce Store-bought or homemade
  • 2 cups lettuce Shredded

Method
 

Preparation
  1. Marinate the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
  2. While the chicken is marinating, prepare the brown rice or quinoa as per package instructions.
  3. Chop cucumbers, tomatoes, and red onion.
Cooking
  1. Grill the marinated chicken until cooked through, then slice.
Assembly
  1. In bowls, layer the cooked rice or quinoa, top with grilled chicken, fresh veggies, and a drizzle of tzatziki sauce.
  2. Serve with shredded lettuce and enjoy!
