Ingredients
  

For the Oatmeal
  • 2 cups rolled oats
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup canned pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/3 cup maple syrup or honey Sweetener adjustment may be necessary

For Greasing
  • Avocado oil or neutral oil For greasing the baking dish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8 inch baking dish.
  2. In a large mixing bowl, combine the rolled oats, pumpkin spice, baking powder, and salt.
  3. Add the pumpkin puree, milk, eggs, vanilla extract, and maple syrup to the same bowl.
  4. Stir all ingredients together until well combined.
Baking
  1. Pour the mixture into the prepared baking dish and smooth the top.
  2. If using, sprinkle your choice of chocolate chips, nuts, or raisins over the top.
  3. Bake for 30 minutes or until the center is set and the edges are golden brown.
  4. Allow the oatmeal to cool for a few minutes before slicing and serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave or oven before serving. For longer storage, freeze individual portions wrapped in plastic wrap.
