Ingredients
  

Vegetables
  • 1 small head small head of cabbage, chopped
  • 2 carrots, sliced
  • 2 stalks celery stalks, chopped
  • 1 can 14.5 oz diced tomatoes with juice
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
Seasonings
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
Garnish
  • Fresh herbs (parsley or basil) for garnish

Method
 

Preparation
  1. In a large pot, heat a little olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the carrots and celery, and cook for another 5 minutes.
Cooking
  1. Add the chopped cabbage, diced tomatoes with their juice, and vegetable broth.
  2. Season with thyme, oregano, salt, and pepper.
  3. Bring to a simmer and cook for 20-25 minutes, until the vegetables are tender.
  4. Serve hot, garnished with fresh herbs.

Notes

For meal prep, store in an airtight container. It keeps for about 4-5 days in the refrigerator or up to 3 months in the freezer. Consider adding beans or lentils for extra protein.
