  • 2 pieces boneless, skinless chicken breasts
  • 3 medium tomatoes, sliced
  • 8 oz fresh mozzarella, sliced
  • Fresh basil leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic glaze (optional)

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with olive oil, salt, and pepper.
Cooking
  1. Grill the chicken for about 6-7 minutes on each side, or until cooked through.
  2. During the last few minutes of grilling, place the sliced tomatoes and mozzarella on top of the chicken to melt slightly.
  3. Remove from the grill and let rest for a few minutes.
Serving
  1. Top with fresh basil and drizzle with balsamic glaze if desired.
  2. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave, but avoid overcooking.
