Preparation
- Preheat the grill to medium-high heat.
- Season the chicken breasts with olive oil, salt, and pepper.
Cooking
- Grill the chicken for about 6-7 minutes on each side, or until cooked through.
- During the last few minutes of grilling, place the sliced tomatoes and mozzarella on top of the chicken to melt slightly.
- Remove from the grill and let rest for a few minutes.
Serving
- Top with fresh basil and drizzle with balsamic glaze if desired.
- Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave, but avoid overcooking.
