Preparation
- Preheat the oven to 325°F (165°C) and grease a loaf pan.
- In a bowl, mix dried fruit with orange juice and let it soak for 30 minutes.
Mixing
- In another bowl, cream butter and sugar together until fluffy. Beat in eggs one at a time.
- In a separate bowl, sift together flour, baking powder, spices, and salt. Gradually add to the butter mixture.
- Fold in the soaked fruit and walnuts.
Baking
- Pour the batter into the prepared loaf pan.
- Bake for about 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
Notes
Serve at room temperature or warm. Pairs well with whipped cream or crème fraîche. Store in an airtight container for up to a week or refrigerate for up to two weeks.
