Ingredients
  

For the cake
  • 2 cups mixed dried fruit Soaked in orange juice for enhanced flavor
  • 1 cup walnuts, chopped Can be substituted with sunflower seeds for a nut-free version
  • 1 cup orange juice Used to soak the dried fruits
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened May substitute half with vegetable oil or applesauce
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon Can add a dash of ginger or allspice for variation
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 325°F (165°C) and grease a loaf pan.
  2. In a bowl, mix dried fruit with orange juice and let it soak for 30 minutes.
Mixing
  1. In another bowl, cream butter and sugar together until fluffy. Beat in eggs one at a time.
  2. In a separate bowl, sift together flour, baking powder, spices, and salt. Gradually add to the butter mixture.
  3. Fold in the soaked fruit and walnuts.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for about 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow to cool before serving.

Notes

Serve at room temperature or warm. Pairs well with whipped cream or crème fraîche. Store in an airtight container for up to a week or refrigerate for up to two weeks.
