  • 1 pound Brussels sprouts Trim and halve before roasting.
  • 1 pound butternut squash Peeled and cubed.
  • 12 ounces bow tie pasta Cook according to package instructions.
  • 3 cloves garlic Minced.
  • 2 tablespoons butter Can be substituted with olive oil for a lighter version.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Toss Brussels sprouts and butternut squash with olive oil, salt, and pepper. Roast in the oven for about 20-25 minutes until tender.
  3. In a large pot, cook the bow tie pasta according to package instructions; drain and set aside.
Cooking
  1. In a skillet, melt butter over medium heat, add minced garlic, and sauté until fragrant.
  2. Add the smoky sausage and cook until browned.
  3. Combine roasted vegetables and pasta with the sausage and garlic butter, mixing well.
  4. Season to taste and serve warm.

Notes

Serve with freshly grated Parmesan cheese or chopped herbs. Pairs well with garlic bread or a green salad. Store any leftovers in an airtight container for up to 3-4 days in the refrigerator, or freeze for 2-3 months.
