  • 2 tablespoons butter
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets Fresh is best, but frozen can be used.
  • 3 cups vegetable broth Ensure it's gluten-free if necessary.
  • 1 cup heavy cream Can be substituted with coconut milk for a vegan version.
  • 2 cups sharp cheddar cheese, shredded Feel free to mix different cheese varieties.
  • to taste Salt and pepper

Method
 

Cooking the Soup
  1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the minced garlic and sauté for another minute.
  3. Add the broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer for about 15 minutes, until the broccoli is tender.
  4. Stir in the heavy cream and bring the mixture back to a gentle simmer.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer it to a blender in batches.
  6. Return the soup to the pot and stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
  7. Serve hot with toasted crusty bread.

Notes

Leftovers can be stored in an airtight container in the fridge for 3 to 4 days. For longer storage, freeze it for up to 2 to 3 months. Thaw overnight in the fridge and reheat gently on the stove.
