Preparation
- Heat olive oil in a large pot over medium heat. Brown the beef stew meat on all sides, then remove from pot and set aside.
- In the same pot, add onions and garlic; sauté until softened.
- Stir in tomato paste and cook for 1 minute.
Cooking
- Return the beef to the pot and add potatoes, carrots, thyme, bay leaf, salt, and pepper.
- Pour in beef broth, bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours, or until beef and vegetables are tender.
- Discard the bay leaf before serving. Serve warm with crusty bread.
Notes
For variations, consider adding peas or green beans, or using a splash of wine or cream for extra depth. Store leftovers in airtight containers for up to 3 days in the refrigerator or freeze for up to 3 months.
