Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, 1/2 cup of enchilada sauce, diced onions, bell peppers, corn, salt, and pepper. Mix well until everything is evenly coated.
- Spoon the chicken mixture into each tortilla and roll them up tightly.
- Place the rolled tortillas seam side down in a baking dish.
Baking
- Pour the remaining enchilada sauce over the top and sprinkle with the shredded cheese.
- Cover with foil and bake for 20 minutes, then remove the foil and bake for another 10 minutes until the cheese is bubbly and golden.

- Serve with your favorite toppings like sour cream, salsa, and chopped cilantro.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. To reheat, place in the oven at 350°F until warmed through.
