  • 2 cups cooked chicken, shredded Rotisserie chicken is a convenient option.
  • 1 cup cooked rice Brown rice or quinoa can be used for variation.
  • 1 cup black beans, drained Can substitute with pinto beans or chickpeas.
  • 1 cup salsa
  • 1 cup shredded cheese
  • 4 large tortillas Mini or taco-sized tortillas can be used for smaller servings.
  • 1 avocado, sliced (optional) For topping.
  • 1 sour cream (optional) For serving.

Method
 

Preparation
  1. In a large bowl, mix together the shredded chicken, cooked rice, black beans, and salsa until well combined.
  2. Lay out the tortillas on a flat surface.
  3. Spoon an equal amount of the chicken mixture onto the center of each tortilla.
  4. Sprinkle shredded cheese on top of the mixture.
  5. Fold in the sides of the tortilla and roll it up tightly from the bottom.
  6. Place the burritos seam side down in a foil-lined pan.
  7. Optional: Top with sliced avocado and sour cream.
  8. Bake in a preheated oven at 350°F (175°C) for about 15-20 minutes, until heated through.
  9. Serve warm.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days or freeze them for up to 2 months. When ready to eat, thaw overnight in the fridge before reheating.
