  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 cup cooked rice You can use brown rice or quinoa as alternatives.
  • 1 cup black beans, drained Substitutable with pinto beans or chickpeas.
  • 1 cup salsa Choose your favorite salsa.
  • 1 cup shredded cheese Any melting cheese works well.
  • 4 large tortillas Mini or taco-sized tortillas can be used for smaller servings.
  • 1 unit avocado, sliced Optional topping.
  • to taste unit Sour cream Optional topping.

Method
 

Preparation
  1. In a large bowl, mix together the shredded chicken, cooked rice, black beans, and salsa until well combined.
  2. Lay out the tortillas on a flat surface.
  3. Spoon an equal amount of the chicken mixture onto the center of each tortilla.
  4. Sprinkle shredded cheese on top of the mixture.
  5. Fold in the sides of the tortilla and roll it up tightly from the bottom.
  6. Place the burritos seam side down in a foil-lined pan.
  7. Optional: Top with sliced avocado and sour cream.
Baking
  1. Bake in a preheated oven at 350°F (175°C) for about 15-20 minutes, until heated through.
  2. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, wrap burritos tightly in aluminum foil and freeze for up to 2 months.
