Preparation
- In a large bowl, mix together the shredded chicken, cooked rice, black beans, and salsa until well combined.
- Lay out the tortillas on a flat surface.
- Spoon an equal amount of the chicken mixture onto the center of each tortilla.
- Sprinkle shredded cheese on top of the mixture.
- Fold in the sides of the tortilla and roll it up tightly from the bottom.
- Place the burritos seam side down in a foil-lined pan.
- Optional: Top with sliced avocado and sour cream.
Baking
- Bake in a preheated oven at 350°F (175°C) for about 15-20 minutes, until heated through.
- Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, wrap burritos tightly in aluminum foil and freeze for up to 2 months.
