  • 8 oz fettuccine pasta Cook according to package instructions.
  • 2 tablespoons olive oil For sautéing the chicken.
  • 2 cups heavy cream Use for a rich sauce.
  • 1 cup grated Parmesan cheese Freshly grated for best results.
  • 2 cloves garlic, minced Enhances the flavor of the sauce.
  • to taste salt and pepper To season the chicken and sauce.
  • as needed Parsley for garnish Adds color and freshness.

Method
 

Preparation
  1. Cook fettuccine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken breasts, season with salt and pepper, and cook until golden and cooked through, about 6-7 minutes per side. Remove from skillet and slice.
  3. In the same skillet, add garlic and sauté for 30 seconds.
  4. Pour in heavy cream, bringing it to a simmer.
  5. Stir in Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add a little pasta water to loosen it.
  6. Add the fettuccine to the sauce and toss to combine thoroughly.
  7. Serve with sliced chicken on top and garnish with parsley.

Notes

Best served immediately for optimal texture. Store leftovers in an airtight container for up to 3 days.
