Ingredients
  

For the Meatballs
  • 1 lb ground beef Choose lean ground beef for a healthier option.
  • 1/2 cup breadcrumbs Can substitute with crushed crackers or oats.
  • 1/4 cup grated Parmesan cheese For added flavor.
  • 1/4 cup chopped fresh parsley Fresh herbs enhance flavor.
  • 1 egg Acts as a binding agent.
  • 2 cloves garlic, minced Adds depth of flavor.
  • 1 teaspoon Italian seasoning Can adjust based on preference.
For the Subs
  • 2 cups marinara sauce Use your favorite brand or homemade.
  • 4 pieces sandwich rolls Sub or hoagie rolls work best.
  • 1 cup shredded mozzarella cheese For topping the subs.

Method
 

Preparation
  1. Preheat the oven to 450°F (230°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1-2 inches in diameter.
Cooking
  1. Place the meatballs on a baking sheet and bake for 15-20 minutes until cooked through.
  2. In a skillet, heat the marinara sauce over medium heat. Add the cooked meatballs to the sauce and simmer for a few minutes.
  3. Toast the sandwich rolls in the oven for a few minutes until golden.
Assembly
  1. To assemble, place meatballs in each toasted roll, top with marinara sauce and sprinkle shredded mozzarella on top.
  2. Place the assembled subs back in the oven until the cheese is melted, about 5 minutes.
Serving
  1. Serve warm and enjoy!

Notes

These subs are great with crispy potato wedges or a fresh salad. They can be made in advance, and leftovers store well in the fridge.
