  • 4 large large eggs
  • 14 oz can diced tomatoes
  • 1 piece bell pepper, diced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil For sautéing
  • Fresh parsley or cilantro for garnish
  • Bread for serving Crusty bread, pita, or sourdough recommended

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat. Add the chopped onion and bell pepper, sauté until softened.
  2. Stir in garlic, cumin, and paprika, cooking until fragrant.
  3. Add the diced tomatoes, salt, and pepper. Simmer for 5-10 minutes.
  4. Create small wells in the sauce and crack an egg into each well. Cover and cook until the eggs are set to your liking.
  5. Garnish with fresh parsley or cilantro. Serve hot with toasted bread.

Notes

For a spicy kick, add jalapeños or red pepper flakes. Can put cheese like feta just before serving for an extra touch.
