Method
 

Make the Pineapple Salsa
  1. In a medium bowl, combine the diced pineapple, avocado, red onion, cilantro, jalapeño, and lime juice. Stir gently and set aside to let the flavors meld.
Prepare the Shrimp
  1. In a small bowl, mix the smoked paprika, garlic powder, chili powder, salt, and black pepper.
  2. Pat the shrimp dry with a paper towel and toss them in the spice mixture until evenly coated.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the shrimp to the skillet in a single layer and cook for 2-3 minutes per side until pink and opaque.
Assemble the Dish
  1. Divide the cooked rice into two bowls, top with the spiced shrimp, and finish with a generous scoop of the pineapple salsa.

Notes

For added flair, serve with lime wedges and extra cilantro for garnish. Adding tortilla chips or a crisp side salad can complete the meal.
