Preparation
  1. Place the chicken thighs in the crockpot.
  2. In a separate bowl, mix together the teriyaki sauce, honey, minced garlic, and minced ginger.
  3. Pour the sauce mixture over the chicken in the crockpot.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  2. Shred the chicken with two forks and stir in sliced green onions.
  3. Serve over cooked rice or noodles.

Notes

For extra flavor, marinate the chicken thighs in teriyaki sauce for a few hours before cooking. You can use chicken breasts instead of thighs for a leaner option. For a thicker sauce, stir in a cornstarch slurry during the last 30 minutes of cooking. Always check for doneness: the chicken should reach an internal temperature of 165°F.
