  • 2 cups frozen dragon fruit
  • 1 cup soaked cashews soak for at least 4 hours
  • 1/2 cup coconut milk
  • 1/4 cup maple syrup or honey use honey for non-vegan version
  • 1 teaspoon vanilla extract
  • a pinch salt enhances sweetness

Method
 

Preparation
  1. Drain the soaked cashews and place them in a blender.
  2. Add frozen dragon fruit, coconut milk, maple syrup (or honey), vanilla extract, and salt to the blender.
  3. Blend until smooth and creamy.
  4. Taste and adjust sweetness with more maple syrup or honey if desired.
Freezing
  1. Pour the mixture into an ice cream maker and churn as per the manufacturer's instructions, or place it in a freezer-safe container.
  2. If freezing without an ice cream maker, stir the mixture every hour for 3-4 hours until it reaches a perfect ice cream texture.
Serving
  1. Scoop the ice cream and serve in colorful bowls or cones.

Notes

Store in an airtight container in the freezer for up to two weeks. If it becomes too hard, let it sit at room temperature for a few minutes before scooping.
