  • 1 cup dill pickles, chopped
  • 1/2 cup red onion, diced
  • 1 cup celery, diced
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 2 tbsp Dijon mustard Ensure it's vegan for a vegan version.
  • 1 tbsp pickle juice Adjust based on tanginess preference.
  • to taste Salt and pepper
  • Fresh dill for garnish (optional)

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, chopped dill pickles, red onion, and celery.
  3. In a separate bowl, mix together the mayonnaise, Dijon mustard, pickle juice, salt, and pepper.
  4. Pour the dressing over the pasta salad and mix until well combined.
  5. Chill in the refrigerator for at least 30 minutes.
  6. Serve garnished with fresh dill if desired.

Notes

Store in an airtight container in the refrigerator for 3 to 5 days. Stir well before serving again.
