Ingredients
  

Lime Jello Layer
  • 6 oz Lime Jell-O Can substitute with lemon or key lime Jell-O for a twist.
  • 1 cup Crushed Pineapple (well-drained) Other fruits like mandarins can be used for variety.
  • 1/2 cup Chopped Pecans or Walnuts Optional. Omit for allergies or to keep it nut-free.
  • 1 cup Boiling Water Essential for dissolving Jell-O.
Cream Layer
  • 8 oz Cream Cheese (softened) Make sure it’s at room temperature for easy mixing.
  • 1 cup Whipped Topping Or 1/2 cup Whipped Heavy Cream. Consider dairy-free alternatives if needed.
Cherry Jello Layer
  • 6 oz Cherry or Raspberry Jell-O Feel free to use any red gelatin variation like strawberry.
  • 1 cup Cold Water Divided into two portions for separate uses.
Garnish
  • 1 serving Whipped Cream For serving.
  • 1 tsp Lime Zest For garnish.

Method
 

Lime Jello Layer Preparation
  1. In a mixing bowl, dissolve the lime Jell-O in 1 cup of boiling water. Stir until completely dissolved.
  2. Add the crushed pineapple and optional nuts, then mix well.
  3. Pour the mixture into a glass serving dish and refrigerate until set, about 2 hours.
Cream Layer Preparation
  1. In a separate bowl, beat the softened cream cheese until smooth.
  2. Gradually mix in the whipped topping (or heavy cream) until well combined.
  3. Spread this creamy mixture over the chilled lime Jell-O layer.
  4. Return to the refrigerator to set for another hour.
Cherry Jello Layer Preparation
  1. In another bowl, dissolve the cherry Jell-O in 1 cup of boiling water.
  2. Mix well and then add 1 cup of cold water.
  3. Once the cream layer is firm, pour the cherry Jell-O mixture over it.
  4. Refrigerate until fully set, about 2 hours.
Serve and Garnish
  1. When ready to serve, top each slice with a dollop of whipped cream and sprinkle with lime zest for a festive touch.

Notes

Keep any leftover jello in the refrigerator for up to five days covered tightly with plastic wrap or in an airtight container. To maintain its texture, try not to freeze the jello, as the layers may separate once thawed.
